Health Benefits :
This soup will provide many health benefits. Carrots are high in vitamins A and C, promoting healthy eyes and supporting a healthy immune system. Ginger adds medicinal properties, including pain relief, reduces nausea, and improves blood sugar regulation.
Ingredients:
2 pounds carrot peeled and chopped
2 tablespoons oil
1 small onion chopped
2 cloves garlic, peeled and chopped
1 long stalk chopped celery
1½ teaspoon chopped fresh ginger
1 tablespoon orange zest
1 cup of orange juice (two oranges)
4 cups of broth of your choice (low Sodium)
Salt and pepper to taste
Fresh cilantro or parsley to serve
Preparation:
In a soup pot, heat the oil over medium heat and add the carrots, onion, garlic, celery and ginger, cook and mix occasionally for 3 or 4 minutes, until the onion begins to brown. Add the broth and orange zest and cook until boiling, then cover the pot and continue to simmer for about 20 minutes or until the carrots are soft. Remove from heat and put them in the blender or use a manual blender and blend until it has a creamy consistency, stir in orange juice and taste salt and pepper. Serve hot with chopped fresh cilantro or parsley.
